Lance’s great grandfather founded H. Forman & Son in London’s East End, in 1905. Today, this family business is the world’s oldest producer of smoked salmon, supplying leading chefs, restaurants, hotels, caterers and food halls, in the UK and globally.

The family’s artisan methods use smoking to protect the fish, rather than to flavour it. The process is completely natural and involves two ingredients only: salmon and salt, and never any sugar. So Forman’s smoked salmon is very delicate, highlighting the quality and freshness of the raw salmon, which is sourced from Scotland and farmed to RSPCA welfare standards. 

Every side of Forman’s London Cure Smoked Salmon is cured, filleted, boned, trimmed, sliced and packed by hand. In 2017, it was awarded Protected Geographical Indication Status – in the same elite club as Champagne, Parma Ham and Gorgonzola – becoming the only London-based food or drink ever to achieve this.
