Coffee soda bread

A creative way to use up coffee grounds, this coffee soda bread combines oats, wholemeal flour and coffee grounds for a rich, textured loaf.
Ingredients

2 ltrs milk

800g coffee syrup

1kg wholemeal flour

525g self raising flour

775g oats
-
55g table salt

40g bicarbonate of soda

200g coffee grounds
Method
Preheat the oven to 165ºC
Set aside 75g of oats, and mix all dry ingredients together evenly. Once fully incorporated, mix together with the wet ingredients.
Pour into a gastrotray lined with parchment paper and top with the 75g of oats. Bake at 165ºC for 35 minutes. Remove from the oven and bake the underside for a further 15 minutes.
Leave to cool before slicing
