Fairtrade banana cake

Banana cake

This lovely Fairtrade banana cake is a fabulous way to use up any leftover bananas.

Ingredients 

  • 270g Soft Fairtrade
  • brown sugar
  • 200g Very ripe Fairtrade
  • bananas, mashed (the
  • riper the better)
  • 280g Plain flour
  • 1 tsp Baking powder
  • 1 tsp Ground cinnamon
  • 1 tsp Ground ginger
  • 2 Free-range eggs
  • 140g Unsalted butter, melted

Method

  • Preheat the oven to 170°C.
  • Put the sugar and eggs in a freestanding electric mixer with a paddle attachment and beat until well incorporated, then mix in the mashed bananas.
  • Sieve the flour, baking powder, baking powder, cinnamon and ginger add to the mixture. Mix thoroughly until all the dry ingredients have been incorporated into the egg mixture.
  • Pour in the melted butter and beat until all the ingredients are well mixed.
  • Pour the mix into a prepared loaf tin and smooth over with a palette knife. Bake in a preheated oven for about 1 hour or until firm to the touch and a skewer inserted in the centre comes out clean.
  • Leave to cool before turning out.
  • Serve warm or try toasting in a panini grill and spread with a maple butter.
