I bring an open-minded curiosity for food and people to BM, constantly exploring diverse food cultures and styles. For me, great cooking isn’t just about technique—it’s about understanding the stories behind ingredients and sharing knowledge that inspires our teams, clients, and customers.

With over 25 years in hospitality across the UK and Australia, my career has taken me through a wide range of food establishments. I’ve opened my own fire-based restaurant, launched a new in-cinema dining concept, and led the kitchen for a corporate events company. I’ve worked in cafés, restaurants, and private members’ clubs, gaining a deep appreciation for different culinary approaches. For the past decade, I’ve focused on corporate catering, bringing restaurant-quality food to workplace dining.

One of my most memorable meals was my first visit to St. John. The simplicity of native dishes, the quality of sourcing, and the unapologetically uncomplicated approach to cooking completely shifted my perspective. It was a reminder that classic food endures, transcending trends—and that the best meals don’t need to be overcomplicated to be truly special.
